Best Meals for a Hot Summer Day

Hot weather is the best time to bring out refreshing, cold dishes to enjoy in al fresco. Of course, you want to spend as much time as possible outside, so we’ve come up with 5 easy meals that take very little prep time. 

Macaroni Coleslaw

Make coleslaw more filling by adding some macaroni to it. You can choose to make coleslaw at home or you can buy it from the store. Cook the macaroni the night before and simply mix with the coleslaw. If you want more flavor, you can add a dressing of your choice to the mix. 

Cucumber-Tomato Sandwich

This dish might sound bland, but if you get your cucumbers and tomatoes from a farmer’s market or your own backyard and season them with fresh herbs, this dish can be delicious! Slice the cucumber and tomatoes, add a sprinkle of sea salt, pepper, and your favorite herbs. Use a toothpick to keep it all together and there you have it: the perfect picnic meal!

Orzo Vegetable Salad

Believe it or not, orzo isn’t rice, it’s a type of pasta. This light carbohydrate pairs perfectly with chopped carrots, celery, greens, basil, and vinegar dressing. Mix together, refrigerate, and tomorrow’s lunch is ready to go.

Edamame Corn Salad

Looking for extra protein after a workout? Instead of grabbing a heavy protein shake, try an edamame corn salad. Steam the edamame, cool in ice water, then mix with corn, cucumbers, and carrots. Toss with a dressing of your choice and you’ll have a post-workout snack that’s perfect for the summer weather. 

Hummus & Veggie Wrap

Instead of making a hot wrap, try a hummus and veggie wrap for an easy, grab-and-go lunch. Spread the hummus onto the wrap and load it up with your favorite sliced veggies. You can even use some of the leftover salads from above! Fold the wrap like you would a burrito and nosh away.
