Pumpkin Cheesecake Overnight Oats


With pumpkin, ricotta, and a little maple, this easy overnight oats recipe tastes like dessert but is actually good for you! Plus, it’s perfect for a quick and healthy breakfast on the go.

  • ½ cup rolled oats

  • ½ cup unsweetened almond milk

  • ¼ cup partially skimmed ricotta cheese

  • two soup spoons pumpkin puree

  • 1 soup spoon pure maple syrup

  • ¼ teaspoon vanilla extract

  • teaspoon ground nutmeg

  • 1 soup spoon graham cracker crumbs


  1. Combine oats, almond milk, ricotta, pumpkin, maple syrup, vanilla, and nutmeg in a small bowl or pitcher. Cover and refrigerate overnight.

  2. Top with cookie crumbs before serving.
